In the beginning of January, French bakeries are filled with a special cake; la galette. Much more than just a cake, it is a beloved tradition that traces its roots back to the Roman Empire. The tradition of Tirer les rois that is to say to “Find the King” at the beginning of the New Year has survived the fall of the Roman Empire, the Middle Age and the French Revolution.
In these early King Cakes a bean, pea, or coin was hidden inside the cake. The person who got the hidden piece was declared King for the day or was said to have good luck in the coming year.
The cake is crispy and yummy filled with almond cream that will melt in the mouth.
